Our Executive Chef

Simplicity and Style— That’s what enkindles Executive Chef Ryan McQuillan to prepare his seasonal dishes at The Exchange while diners take in the rolling countryside and urban landscapes of Lancaster.

The Pennsylvania native tirelessly scours local farms and masterfully ingrains the harvest’s bounty into recognizable, but extraordinary offerings. While roles and awards at acclaimed restaurants like Le-Bec Fin, 10 Arts Bistro, Mercato BYOB and Talula’s Table have refined his resume, the open layout of The Exchange’s kitchen puts him on the only stage he wants, bringing guests into the experience with a lively and aromatic background.

Chef Ryan adores Lancaster’s rich cultural roots and creating new exciting plates isn’t just a job, it’s a passion.
